This sheet pan recipe is super easy and yummy! Your whole family will love it and it doesn’t require any side dishes – win win!

This yummy dinner is fast and easy for any day of the week! I love that the ingredients are cheap and it makes A LOT of food. We always have leftovers to eat for lunch the next day.
Preheat the oven to 400 degrees.
Wash your potatoes and then dice them into cubes. I used about 7 which was half of my bag, but you can make more or less. Make sure you leave the peeling on for a delicious flavor! Dump in a large mixing bowl.
Next, slice your chicken sausage into coins.
I love the spinach & feta chicken sausage from Aldi, but any kind of sausage will work depending on your taste preference.
Add the sausage to the bowl and toss with the olive oil, parmesan cheese, onion powder, garlic power, and a little bit of salt and pepper. The olive oil makes everything stick so feel free to add more or less. You can add more parmesan cheese for better coverage as well.
On a large greased sheet pan, spread out a layer of green beans. You can use frozen or fresh. Then spread out the potato and sausage mixture on top.
Bake at 400 degrees for 30-40 minutes or until potatoes start to turn a golden brown. Be sure to do some flipping and tossing about halfway through to prevent sticking to the pan.
Enjoy! Another delicious way to eat this meal is with scrambled eggs on top!
